I just got hired at Din Tai Fung as a dumpling chef. I'm the only white person surrounded by Asians.
There's a glass window into the kitchen so customers can watch us prep dumplings. How do I not fuck this up?
Do cooks really get tips?
What position do you guys work?
How long have you worked in that restaurant?
What does your position pay you guys?

Get their recipes and then let us know what they are. What do they coat their crumbed chicken fillets in?

Just work hard and try not to make mistakes. Kitchen usually gets 20-25% of tips (in Aus at least), but it depends on where you are.

I can only answer how tips work. still just a lowly dishwasher peasant.

Cooks will get tips if there is a "tipout" where a bit of the wait-staff's tip goes to the kitchen based on a percentage of the food sale.

This is true, it completely depends on where you are. In the U.S. sometimes tips are spread across the entire house. Other times, the servers will gets all the tips but receive a lower hourly wage, while other personnel will get a higher wage to compensate.
