Made me some delicious mac n cheese from scratch. Was following a recipe I picked up to the letter though, so there's lots of room for improvement.

What's in it, you ask? The short answer is Sharp Cheddar, Gouda, and Blue Cheese, because that's really the most important part of this whole thing.

Other fun facts: costs about $3.25 a serving with the recipe left as-is (I know I can get that way down though). It's super duper fucking rich. Uses a bechamel based sauce.

I add vegetables as a filler. Why not have a side dish incorporated in your main dish, right? It's like mac n cheese with cheesy broccoli and cauliflower side. They have to be roasted for a little while to dry them out a touch.

i like to have roasted vegetables or a salad on the side with vinegar and no oil. the acidity goes well with the fatty mac and cheese.
