Kitchen I work in doesn't have any hand guards for them. You can get away with not using one, the trick is to put your palm on whatever you're slicing and curve your fingers up. As long as you keep the blade sharp enough to cut things cleanly you don't have to worry about anything slipping.

-add seasonings (I use fajita/taco ones myself) and spices
