The home-made version is pan fried. The term "grilled cheese" comes from restaurant menus where it is cooked on pic related. Pic related is called a "plancha grill", aka "griddle". That's where it comes from.

What I made today. Mozzarella, bacon, and avocado on homemade Italian bread. I think white cheeses (swiss, provolone) are good for grilled cheeses.

Not the poster you're replying to, but, cook it slowly, very low heat.

I'll assume you grill both sides of the bread too, but if you don't... heat the "inner" sides of the bread slices before assembling the sandwich.
