Preach. A good tomato doesn't need any frippery, a good tomato is a glorious thing by itself. The principle behind a lot of Japanese cooking is just to take very good food, dress it simply and present it so it can be appreciated for its own qualities.

Of course the principle behind other Japanese cooking is to make spices into a slurry and pour it all over a pork chop, but that also tastes delicious.

That is how that broth comes off as at first taste. Japanese food is about harmony of flavors. It isn't about punch you in the mouth. If you look in Tokyo you can find pretty much every regionally popular dish in the city, as well as pretty much every other kind of food in the world. Its ridiculously diverse. However depending on the food it may be decent but not great. Like Hiroshima style okonomiyaki or Chicago deep dish. Sometimes it'll just be totally lacking, like the Mexican food.

However sometimes you'll find food that is just as good if not better like Osaka style okonomiyaki, takoyaki, and Italian pizza. The winner of the best Italian pizza in the world for like 3 or 4 years straight runs a pizza restaurant in naka meguro
