Here, I'll give you a tip: try to find exactly this "Iberico De Bellota Paleta boneless"

The paleta is the front leg, its smaller (so you don't have to get a 17lb one, you can get like a 5lb one that's 100% yeild) and it cures faster, so it ages less and costs less per lb.

Always make sure to get the Iberico "de Bellota" or "Puro Bellota". That means it was raised in the forrest eating acorns. The regular iberico (iberico cebo) is farmed, and while it's still good, isn't really worth the money.

An Iberico de Bellota Paleta boneless will be about 5lbs, maybe cost a retail consumer $300 total, and will last for years if kept properly (refrigerated, smeared with lard to keep moisture balance).

And fuck man... Fresh sliced iberico whenever you want. It's the only way to live. It's so addictive, my wife demands we have some in the house lol.
