I am from Italy.
I don't mind if someone says "carbonara with cream." If they say "carbonara" and say that cream is standard, that would be wrong, though nothing word arguing about.

I think most of us consider carbonara and carbonara with cream to be two separate dishes. Kinda like, for Americans, how a quarter-pounder and a quarter-pounder with cheese are two separate menu items at McDonald's or a Whopper and Whopper with cheese at Burger King.

Is the type of cheese important? I used to use Grana Padano but it switched to fake Feta because it's cheaper.

I usually use more than one type of cheese. I use aged cheddar and parmesan, I'd use something other than cheddar if all the italian cheeses weren't so god-damn expensive where I shop.

I've made it both ways, and I don't believe the difference in taste is significant enough to warrant so much constant debate.

People will invariably alter recipes to their liking. It doesn't stop being X. It doesn't start being "X with ingredient I don't like."

I once had a Spinach Waldorf (as it was listed on the menu).
Had it been listed as "Waldorf" and they brought out this plate of spinach and fruit, I'd have been upset. But they called it for what it was, so I was mostly fine. I say "mostly" because they did two other changes: instead of mayonnaise, it was obviously some sort of mayo-like/mayo-based thing, like Salad Cream or Miracle Whip. And the apples were dried rather than fresh.
But the fact that they called it 'Spinach Waldorf' rather than regular Waldorf made it okay, IMO.

On the opposite side of the fence, I once went to a place for brunch. I ordered an omelette with ham and emmental. When it came out, it wasn't an omelette at all. It used to be, but stopped being an omelette one once they sliced it into strips and tossed it with microgreens and a warm bacon dressing. None of these things were mentioned on the menu. That pissed me off. My ex and I got up and left without a word.
We went to dimsum thereafter, instead.

I agree 100%. If the menu listing is accurate, then I'm also fine with variations on a theme. However, I've sent cottage pies back to the kitchen because they were listed as Shepards and have done the same with poutine when it arrived laden with pizza /cheddar cheese mix, was toasted in a pizza oven.

If dish X has a particular definition set by its originator and someone makes dish X but ignores that definition, insisting that it's still dish X, I get a tad miffed.

Another example is this time I ordered a decaf iced tea at a café in Austin because I had too much coffee that morning and just wanted to sit in air conditioning for a short while before venturing back out into the ridiculous heat.
The iced tea wasn't iced tea. It was agua de jamaica. It was nice and I enjoyed it, but I was a little peeved because I was expecting a regular black tea. I mentioned it to the counter, saying that I was simultaneously annoyed but also pleasantly surprised because I actually prefer agua de jamaica and asked why I didn't get what I ordered. They said that they don't do decaf tea and that the policy is to use agua de jamaica as decaf.
Why the place had "decaf iced tea" on the menu, I'll never understand.

I guess their half-caf iced tea might be half agua de jamaica, half black tea. That might be good.
