Convenience mainly. I use mine mostly for toasting larger or odd sized things that don't fit in the regular toaster. I've occasionally made smaller portions of stuff like fries or chicken nuggets or nachos so I don't have to heat up the regular oven. Also works pretty well for toasting sandwiches and stuff like that.

also broiling things is quick/easy
doing things like melting cheese on things like nachos or toasting sandwiches

it's also really convenient to use as a warming drawer

I used to live in a shitty apartment with literally just a kitchen sink and space for a fridge. Toaster ovens and plug-in stoves were pretty much the only way you could cook food, and to this day I still have fond memories of using them.
