Found a good deal on "Cornish game hens" today, so I bought a pair. They weigh about 4½lbs and I paid $5.12 total.
I stuffed them with sticky rice I flavoured with fresh coriander and dried onion and put them in my pressure cooker with 2 litres/quarts of water and cooked'em. There's some rice leftover that wouldn't fit in the chickens, so I steamed that separately and stirred in some chicken fat I saved from making plain stock a while back..

Gonna have chicken soup tonight with fragrant rice, long broccoli, dried cabbage leaves, garlic chives, boiled egg and pickled veg.
Either that or leftovers. Thinking about storing the chicken, rice and soup for tomorrow and eating some leftovers tonight because this soup tastes even better the day after.

I had a simple chicken-and-rice soup/porridge thing.

Ingredients:
Chicken
Rice
Dried onion
Coriander
Water
Salt

That's it.
The whole thing makes four HUGE portions and costs under $1.50 per serving.
Cooked it yesterday but this dish tastes best as leftovers. I usually crack an egg into it when reheating, but not this time.

Most people in the deep south eat tons of veggies. They may deep fry them, or stew them, (or in my southern side of the family's case, lots of salads and vegetable bakes), but southerners do love their veggies. And most southerners I know would shun nuggers, because it's not good fried chicken. There's a reason why you only see southern freaks on tv, it's because that's how the networks get you to watch their shows. If they had a show about a nice, normal southern family, no one would watch it.

Okay. I'll also give you the recipe for creole seasoning as well, after.

Creole Dirty Rice:

4 cups leftover or cold cooked long grain rice (protip, cook the rice with a bay leaf for better flavor in the finished dish)
3 slices of bacon
2 medium onions, chopped
4 stalks of celery, chopped
2 large bell peppers, chopped (I like to use red, but whatever floats your boat)
3 cloves garlic, minced
1 pound hot pork sausage
1 pound chicken livers, cleaned and pureed until smooth
4 tablespoons or more (I usually use more) Creole seasoning
Salt to taste
Jalapeno hot sauce to taste OR 1 chopped fresh jalapeno or other hot pepper
1 bunch scallions, chopped

In a large pot, cook bacon until crispy, then remove but keep a couple tablespoons of bacon fat in the pot. Add the onions, celery, and bell pepper (and fresh jalapeno, if you're using it), and saute until soft and turning golden. Add the hot pork sausage, the pureed chicken livers and the garlic, and cook, stirring frequently, for about 20 minutes, or until meat is browned. Do not strain. Add the Creole seasoning and stir in well, and simmer on medium-low heat for another 20 minutes. Meanwhile, crumble the bacon.
Then add the cooked rice and the bacon, and the jalapeno hot sauce if you're using that, and simmer, stirring, until hot all the way through. Add salt to taste, if necessary. Add the scallions, and it's ready to serve. Extra hot sauce optional, but I usually add some Louisiana Gold at the table.

Creole Seasoning:
5 tablespoons paprika
2 tablespoons (or to taste) ground cayenne
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons dried oregano
2 tablespoons dried basil
1 tablespoon dried thyme
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon celery salt

Mix all together and keep in a tightly sealed jar. I don't add extra salt to my Creole seasoning, because I prefer to salt as needed. I just add the celery salt, and leave it at that.
