I mostly stick to raw chocolate liquor or powdered cacao nibs I mix with sugar myself. Usually semisweet chocolate chips as well, because honestly they're better at emulsification ratios than I've managed to replicate, perfect amount of solids, cocoa butter, and sugar.

I also like chocolate with caramel and sea salt bits in it. Usually I buy chocolate that's ~55% cacao. Anything more is an overpriced waste and I'll just eat the aforementioned beans raw.
