A cheesesteak with good meat, good bread, and good cheese (provolone) really only needs one other veggie in my opinion. I almost always go with fried onions cut fairly large.

If one of the components is not so great I go with a cheesesteak hoagie and add tomato and lettuce

Sweet or hot peppers seem to be pretty popular but I wasn't a big fan. Mushroom cheesesteaks are a thing but don't seem popular. I've seen pizza steaks on menus but never seen anyone order one.
