Mexico’s oldest alcoholic beverage works in strange ways.

The frothy white beverage predates the arrival of the Spanish by at least 1,500 years; it’s the ancient ancestor of mescal and tequila. All three drinks come from the same family of plants, but pulque is made by fermenting – as opposed to distilling – the sap of maguey, or agave. The maguey plant can take eight to 12 years to reach maturity and produce sap, or aguamiel – literally honey water. Fermentation starts almost immediately after the plant is cut and the aguamiel begins to run; the beverage continues to ferment – and become more alcoholic – as it makes its way down your throat. It’s usually between 2% and 8% alcohol but tends toward the lower end of the spectrum.

Production of pulque, by contrast, begins with aguamiel which has been extracted from the core of distinctly different types of agave, known as pulqueros. Once the pulquero has matured, after between 12 and 20 years of growth, the aguamiel is harvested and then fermented; no baking, no crushing, no distilling. Well, after I said it something (re)clicked in mind that there are two ways of looking at the same thing. One, as the system it is subjected to changes, the "properties" a compound has within it, do as well. The compound's properties are defined by the state of the system it's acting within.

The other the compound has a spectrum of intrinsic properties, regardless of where it is or the state of the system it's in. More or less it's unchanging.

I don't know. I think as ways of looking they both have their uses, but I can understand why people wouldn't like to say the compound itself's properties have changed when other things are around it. Its capability and mechanism of action stays the same, it just ends up doing different things within the whole.

I would definitely not recommend canned pulque to anybody, since part of what makes pulque so strange (and delicious, in my opinion) is the fact that it normally isn't done fermenting when you drink it. The proprietors of the pulquería I frequent in Mexico City have claimed that it actually continues to ferment in your stomach, which a lot of people experience as a kind of bloating similar to the feeling I get when I drink beer. It's supposed to be good for digestion, as well as loaded with vitamins, but I haven't noticed any dramatic digestive effects either way.

The general consensus seems to be that pulque should be consumed within one or two days of its production, so I can't imagine that canned pulque would compare with the real thing, which I find quite pleasant to drink.

And for the record, the Mexica didn't invent pulque to get buzzed -- it was a ceremonial drink associated with religious communion with spirits and divinities, similar to chicha in the Andes.

Look deep into the mexican communities it won't be east to find in the first place. Here in northern california it is available (in a lower quality) in limited amounts it is illegal as it is not controlled by the ATF ... so look into the older mexican communities which should be found locally in your area .... the last I understood the flavor of pulque has been sold in a refined hard liquor state although the flavor is accurate the effects are that of a hard liquor ... as for the drinkable quality it has been greatly enhanced without the dense consistency in the newish product.

The fact that pulque is alive prohibits that it be canned or bottled .... it must be allowed to breath along with protected from many, many, unclean materials .... the unclean materials are items such as detergents and perfumes reminder this product is very much natural and it easily affected by its environment. The best way to clean anything in contact with pulque whould be something washed with specificall natural "weeds" not some man made detergent.
I traveled with family from hidalgo to chiapas with 12 liters pulque. The pulque needed to be rushed in order for it to not go bad. The bottles we capped with maguey tips and they were bubbling over since they were filled and allowed to breath. The pulque was a huge treat as they were from the family farm. We also made mixiotes with the handfull of turkeys that followed us indoors along with the lamb we brought from Zacatlan.

Pulque is a mans drink though and though, so don't expect to behave like some sort of faggot and be invited by fine company to enjoy such a prized elixir.
