that's not a description of what makes a big mac great.

In fact, it's a description of why big macs suck compared to what you can make at home. Fast food companies need all their meals to taste the same, and in massive volume. That means they simply cannot buy good meat. It's simply not available in that kind of massive volume. They also have to cut corners to favor efficiency, like grinding the meat in a factory and freezing the patties, as opposed to grinding the meat fresh before cooking. As a home cook you have no such constraints, so you can instantly improve on the dish by using better meat and not grinding it until immediately before cooking. And the same is true for all the other components of the burger as well.

Go search thrift stores for old fashioned, all metal meat grinders. I have a huge one that clamps to my counter top and is super easy to clean that I bought at Goodwill for $7. Just make sure you scrub it well before using, and use a wire brush to get in any crevices. Also, (protip) running a couple slices of bread through the grinder after grinding the meat will help clean out the fat and residue.
