Nice trips. I grew up in the 80's, and had plenty of Italian-American friends, and a few Italian friends. As an adult I have Italian friends. Some I socialize with, and I couple I know who own restaurants I go to often. I like food, so living in a place where I get to eat with Italians (and French, Chinese, Vietnamese, Mexicans and Middle Easterners) is important to me, because it means the food is going to be good.

But yeah, the 1910 vintage pizza joints are a nice bonus to have around as well.

But my point was if you don't have a benchmark for Italian food don't bother trying to get one from a recipe. You have to eat it first.

First get your terminology sorted and never let the term "spaghetti sauce" pass your lips again. Spaghetti is just a type of pasta, nothing to do with the sauce. And I'm guessing your "spaghetti sauce" is bolognese - basically a tomato and ground meat sauce.

Find a decent recipe for tomato and basil sauce and
work from that.

Also bolognese isn't bound to spaghetti, use any pasta you want. Some work better than others. Same is true of any sauce/pasta combination. Don't let people tell you your taste is stupid, even if it is truly monumentally irrational.

Ok, here is the easiest, pomodoro recipe I have ever made. If you have a gf, her panties will come flying right off at the table. You should also learn to make your own noodles. The shit in the box is just blech.

8 to 10 Italian plum roma tomatoes
3 tablespoons extra virgin olive oil
4 cloves of garlic minced
3-5 mushrooms diced (porcinis are great for this)
6 basil leaves
Salt and pepper

First, get rid of the tomato skins. The easiest way: with a knife, make an X mark into the top of each plum tomato. Drop into hot boiling water for 10 seconds and then shock into ice water bath. It will peel off easily. Cut into 4 wedges and deseed them.

On to the sauce: Preheat a large skillet over medium high heat and add the olive oil. Add chopped garlic and sauté until golden brown. Add mushrooms and sauté for a minute. Add tomatoes to pan, crush them up, and add salt and pepper. Continue to cook for 15 minutes uncovered to let some of the water from the tomatoes evaporate. If it's still too thin after 15 minutes, continue cooking until you get the desired thickness. Finish with basil and toss pasta into sauce.

I have friends who let this simmer on their stove overnight to get rid of the moisture from the tomatoes and make it super thick. Experiment with it.

Listen, tomato sauce is only one of the undred ways you can dress pasta (Yes, pasta, coz there are like 100 different kind).
Try something different, break 2 whole eggs in a bowl, beat them well with 2-3 spoons of Parmigiano, a ground of fresh pepper and set aside. Then heat a small non stick pan, cut some pancetta (Or bacon) in small cubes and stir fry until crispy (Not burned).Meanwhile cook the pasta (Linguine, spaghetti or bucatini) in a lot of water.
When it's ready, drain well and add egg mixture and bacon in a bowl, mix vigorously (The egg must become a cream) and serve REALLY HOT. Add more Parmigiano if needed. And this is CARBONARA motherfucker.
