There are a lot of kosher wineries making decent wine these days.

Concord wine is a holdover from the early 20th century when Americans didn't drink much wine and jelly grapes were the only grapes you could get in bulk in New York. Now it's just traditional.

We usually start with gefilte fish. It tastes awful but slather a bunch of beet horseradish on it and you'll forget what you're eating.

gefilte fish - basically a cold meatball made out of whitefish
eat plain, or with horseradish on matzo

Matzo ball soup- basic chicken soup with celery onions and carrots, with matzo balls. basically a dumpling.

Charoset- a mixture of apples/fruit/nuts/cinnamon and some wine (recipe can vary heavily for family recipes)

celery/parsley with salt water

macaroons are these little coconut based deserts that are garbage.

Those are the traditional mainstays at least for my family.
Pot Roast can be in there too.

I've seen that Galilee stuff but I've never bought it because it's made on stolen land. I'd be totally down to try a good kosher wine if it was made ethically, got any recommendations?

Not off the top of my head, sorry. I'm a goy, and when I was in the wine business I never dealt with the kosher wines. From what I understand if I were to open a bottle of kosher wine that would make it not kosher anymore (unless it's that meshuval crap). How the fuck could I have sold them when I'm not allowed to even pour them? I have tried a few good kosher wines in my day, but never remembered the names of them because I have no reason to buy them.

But I'm sure if you went to a wine shop in a place where a decent concentration of affluent Jews live you'll find something. Very few modern Jews are drinking thick, sweet wines if they can help it.

It depends on what sect you belong to, and what teachings you choose to follow. Judaism has what is called "halakha" which essentially are rules and precedents that arent stated in the Torah but rather made by rabbis that over the centuries have become to be taken as law as well.
A reform or maybe even conservative person would agree with you but anyone who calls themselves orthodox or hassidic would scoff at you for saying that.

Royal Wine is the biggest California kosher winery I think. They have two major brands - Herzog for real wine and Kedem for the sticky sweet stuff.

My family reciple is pretty simple,
4 large apples, diced (macintosh is the usual but any medium sweet red is fine)
a small bag of chopped walnuts
cinnamon (to taste, we do a decent amount)
honey (enough the entire mixture is somewhat sticky)
and couple splashes of manischewitz for taste and color
