Local and regional is where its at (Unless you're talking about most of the Midwest). Then you have a fuck awesome variety of local specials, worldwide cuisine, fusions of various cuisines, and a fairly rapid rotation cycle of trends.

Yeah, it's different from Europe/Asia's "we've made it this way since the 1200s", but if you look hard enough you can find the traditions of many places being upheld in surprising locations (traditional German sausage in Texas, what? )

American food isn't really about a great history of always having done stuff one way, but about change and getting to pick and choose from extant cuisines around the world, both ingredient wise and technique wise.

It's not just that. It's also that flyover land was originally populated by the likes of Germans and Scandinavians who for whatever reason forgot about the interesting aspects of their homeland cuisines and just uphold the godawful/bland aspects (like how lutefisk is still a thing somehow in the northern plains).

When you add in the historical sparse and relatively unchanging population levels, you lose out on cultural intermingling and on different familial takes within a given culture. Now add into these areas a relative lack of ingredient choice (most herbs and spices do better in hotter climates, and remember we're talking historically so transporting such to poor people wasn't exactly a goal), you end up with bland, uninspired tastes. reinforce this with the idea that being plain is somehow noble, and you end up with an area that are often as not won't even put salt and pepper on a steak.

Over time, flavor has almost been rediscovered in the middle of America, but only through national brands and chains which are diluted to the point of being inoffensive to the most number of people, so you're left with a great, wide open space where people only know flavor designed to appeal to the lowest common denominator and crappy versions of other region's specialties.

Typically flounder filets, fresh-caught, shelled, butterfly-cut shrimp, all deep-fried in a beer batter, served with cheap beer, fries, and hushpuppies (seasoned beer batter deep fried in balls, with a name given to make the dogs shut up when people were frying fish).

>Texan/Mexican food
The kebab of the US. US is riddled with shitty mexican food and tex-mex food, but the really excellent places will blow your mind with lime/salt/garlic guacamole, fresh salsas and pico de gallo.

OP's pic is so far from what a good burger looks like that it makes me weep. I place near my home sells 5$ burgers on Tuesdays. Inch and a quarter thick, that-day freshly ground beef in-store, chuck sold by a local butcher, pickles brewed by a local pickle company, and buns baked by a nearby bakery. My personal favorite is the Palmetto burger- GOOD pimento cheese (sharp cheddar, none of that Ruth's garbage), fried green tomatoes, and two strips of bacon.
