Who here actually likes Silverside? How do you cook yours? My girlfriend loves it more than anything/one.

I cooked a 1.5kg lump of the stuff yesterday. I Rinsed and soaked it to get the excess salt and brine out of it. I decided to cook it in a vegetable soup so that I could just cheat and make beef soup at the same time.

7 hours of slow cooking later everything is ready and upon plating up my girlfriend is literally crying at the sight.

Apparently I completely ruined everything. She was yelling with tears of rage running her makeup. According to her the only way to cook silverside is straight out of the pack into boiling water and just waiting 2 and a half hours. The vegetables I cooked chould have been just boiled separately or roasted and served as is not as a 'shitty soup'.
She said the soup tasted like beef stock and the Silverside tasted like raw vegetables throughout. She refused to eat any of it and went off to buy tacos for herself in protest.

Admiteddly the soup was a tad salty. The meat though just tasted like silverside. Now I've got a kilo of cooked silverside to eat myself.

Who was in the wrong? or ignore all that and talk about silverside.

Funny enough, I did a brisket (silverside) this evening.
Was the best I'd ever done.

2 tblspns tomato ketchup
2 tblspns brown sugar
2 tblspns white vinegar
1 red onion rough sliced
6 whole cloves
4 whole allspice
20 peppercorns, lightly crushed
1/4 teaspn whole mustard seed
5 lbs. cut of meat, rinsed lightly
Put all together in a dutch oven, on a stove, add water till the meat is covered; bring to a boil then lower heat to a simmer for about 2-to-3 hours till fork-tender.

Best damn coned beef brisket ever.

The recipe is from a book that predates BBQ sauce.
Also, only 2 tablespoons of each ingredient, to the then 7 cups of water... kinda moot.
Really, the catsup and vinegar are there to set the color of the beef and help break the proteins in the cook.

boiling it is the traditional way, but soaking and slow cooking it is fine too. I think where you fucked up is cooking it in soup, cook it in water and then use the water to make soup, then you can better manage the flavours and saltiness.

I think your gf was in love with the fond memories of childhood dinners, which I understand, but if she wanted it done like that she should have told you, or just do like I do and cook it myself.
