Any of you hunters or like wild meats?

How do you go about cooking yours?

Ive been rabbit hunting a lot lately and im trying to find new ways to cook them.

Tonight I am putting this big old boy into an Hmong styled soup. (Lemongrass, ginger, garlic, galangal, chillies and veggies. )
Got bored of the typical western stew.

I have his fluffy little tail here .

But yeah the rabbits are super duper fluffy and cute. But they are real massive pests here in New Zealand because they don't have many natural predators. They are introduced into this bunny wonderland where they are free to eat, fuck and reproduce with very little predatory pressure.

I also like knowing I am getting my meat from a free range source and the animal had a good life before it dies really quickly. (I normally get them in the head or neck with my rifle)

My roommate often comes home with venison, boar or rabbit. I find that it needs a more robust seasoning than a lot of comparable farm-raised meat. All those aromatics you're using sound like a solid plan. Any fish sauce going into the broth?

Yep! I put a tablespoon of fish sauce in there. It is turning out really good. It is very spicy, probably from all of the chillies, ginger and szechuan peppercorns.

The wild meats tend to have a weird flavor in my opinion, and i like mixing up that flavor with other stronger ingredients. I haven't had the opportunity to get boar or venison yet though. Ive been getting wild goats, wallabies and rabbits.

Boars he typically shows up with shoulder cuts, which benefit from an overnight cure with lots of dried herbs and cracked pepper, followed by a good thorough sear, followed by a good low braise (220 F) after hitting the pan with some dry vermouth or brandy (you can just use white wine if you don't keep vermouth on hand) and some chopped up aliums. Alternatively, you can fully submerge the cubed up meat in rendered fat and poach it, essentially making carnitas/pork confit, but with a much more robust flavor.

The venison he typically has tenderloins, which I've cut steaks out of or roasted whole, usually with a pretty hefty spice rub of cumin seeds, black pepper, chile flakes, paprika, and just a red cunt hair's worth of cinnamon.

Didnt intend to, but i had some photos so i made a thing here.

I didn't take many photos of the end product, and now it is in the fridge. The only good one is the last picture in this thing.


What I did was as follows:

Brown rabbit meat in oil. Set aside.

Fry garlic, chilli, ginger, galangal and lemongrass for a while.

Add rabbit meat back in.

Add chicken stock, lime leaves and fish sauce.

Simmer for 2 hours.

Add Szichuan peppercorns, chinese cabbage, beansprouts and snowpeas. Simmer for another 10 minutes and it was served.

The original traditional Hmong recipe included squirrel meat, but i used rabbit instead as it is not possible to obtain squirrel in my country.

I love wild meat (never prepared it myself though, looking forward to the challenge), it is so delicious.

Apparently there are wild pigs in the area! Can't wait.

I just hunt mine on private property. I met a nice couple who have rabbits running around ruining their land and so they let me take them out.

The problem with their property is that it is very difficult to hunt on. The grassy areas are very long, and the areas with no grass is thick bush/forest.

I don't know much about diseases in rabbits. I eat them if they look healthy (bright eyes, clean fur, clear vent) and their organs look normal. Occasionally i find a liver with weird white rice-looking things embedded within it, not sure what that is about, but i havent gotten sick (from the flesh, not the liver) so i suppose that was alright.

I am quite emotional and sometimes i get the shivers if i look into the eyes of the animals I kill. :(

In the end I am still a meat eater and I like getting wild meat myself.

I think the best part is the stalk itself. Tons of fun. After the shot is taken its all over.

All these pics of dead rabbits reminds me of when my pet bunny died last year. He was very obese though, so I'd hate to know what his organs looked like.
We buried him in a wooden box.

Yeah, i love that about hunting. I know that the meat i get came from happy animals with a free life.

The emotions i get are more from knowing that I took the life away of another creature that has its own history and goals. I took that away to feed my own existence. One of the rabbits I shot was, just a few seconds before, 'kissing' another rabbit and relaxing.

But yeah, in the end that is what life is all about. Destroying another living thing to sustain yourself.

My emotions are one of the reasons why i wouldn't hunt intelligent animals like magpies. Magpies are shown to have self awareness and i wouldn't want to make another magpie depressed because i shot its partner. Also i wouldn't eat magpie so it would be a waste of life anyway.

Going to bed now and decided to have another serving of the soup. I did not like having to sift through the bits of ginger , Szechuan peppers and galangal. Taking a bite into those things makes me gag. So I filtered the soup in a strainer so all I was left with was clear soup. I picked out the rabbit meat too.

I then microwaved the soup with some fresh beansprouts, pak choy and an egg to top it all off.

A really potent aromatic stew. I might cut on the chilli and ginger next time because if it gets into the wrong spot in my throat I go into a coughing fit.

Hmong styled soup highly recommended. Just google it to find variations.

Might try a German styled stew next for rabbit. Will hopefully get some wild goat for vindaloo too.

I used to live in a country where hunting is nonexistent, and owning guns is pretty much outlawed entirely.

So glad I finally have the freedom of living in a country where hunting is free all year round. No hunting seasons and all that. The game animals here have no natural predators except humans because they are all introduced.
