Me I'm making pasta with anchovies and broccoli and parmesan. I made the pasta fresh, I roasted the broccoli first, I added fish sauce to the marinated white anchovies. As a side I have castelvetrano olives with roasted brussels and blanched kale in a spicy oil dressing.

I hope this is an appropriate place to ask.

I live at home with my mom (Im 19) who is an excellent chef, and I cant really cook. I help her out and that and can make a basic meal, but the last time I tried to make my own pasta sauce it turned out horrifically.

Im going overseas later this year to stay with friends for a couple of weeks and would like to be able to cook a couple of meals to help out and show my appriciation.

How, and how long do I need to spend, do I get good enough at cooking so that I can make a nice meal with a reasonably pantry+fridge and just recipies from my head? Is there some fasttrack way to getting this particular skillset?
