let meat sit out on a rack for 60 minutes.

salt both sides to brine the meat

get a bag of natural lump hardwood charcoal glowing red hot

throw meat directly onto charcoals for 45 seconds on each side.

wrap in foil and let sit off to the side for 15 minutes
