The tortilla actually isn't soggy. Once it was filled, I grilled it so the outside was crispy and golden brown. THEN put the sauce and cheese on. I decided to go with what I call "American breakfast" fried rice.
Lincolnshire sausage (because good American breakfast sausage is difficult to get). Cooked, refrigerated rice and a splash of water. Egg already par-cooked, scrambled in bacon drippings. Shredded American deli cheese. Sautéed together in that order for 1-2 minutes for each item before adding the next one in the order. When you add the cooked egg and toss it about with the rice for about a minute, off the heat before adding the shredded cheese. Then salt and pepper to taste.
