Cotechino is somewhat similar to Salami, but it has to be cooked. It's pork meat, pork fat and flavors stuffed inside a pork skin "pocket". We usually eat it every New Year's Day with lentils (i like them cooked in tomato with onions, since lentils aren't really tasty by themselves). Pretty hardcore stuff

Emilia-Romagna and Tuscany make some pretty rad cheese. Just combo em with jams, honey or fruit for a pre-main course or even dessert. My favourites have always been soft cow cheese with fig jam, seasoned soft goat cheese with honey and a couple drops of Sambuca (anisette liquor) and of course the godlike Pecorino with pears combo.
