Season 2 focuses on Sean Brock for about half the episodes. They're really good. It's kind of wild to see a fiercely smart Southern chef who grew up as a hillbilly track down almost lost ingredients, then come up with modern recreations of classic Southern flavors.

Not only is it interesting, but it brings home how American regional cooking has been wrecked over the last 60 - 70 years. It isn't just that people don't have the time for more labor intensive dishes. It's also that you can't get the varieties of vegetables and quality of meat those dishes were based upon at a fucking supermarket. So people just stopped cooking those dishes because they didn't "work" anymore.

Like something as simple as buttered white rice. It was once a thing, back when the quality of rice was super high, and people had access to homemade butter. But if you to the supermarket, get some rice and butter, then go home and make it you'll be left wondering why people in the past had such shit taste. Turns out they didn't.

Also the animated bits are pretty good, and Harold McGee is fun to watch.

The first half of season 2 of Mind of a Chef is fucking great television.

I feel your pain, though. I live in Bklyn, and my wife has come close to ordering some of that rice a couple times. Sooner or later we'll get some.

And Northeast winter is a bitch. I can't tell you how many cabbages and carrots I've gone through so far, and ramps are still two months away. But in spite of a short season we get some good stuff. Remember how good the tree fruits were last year? Best pears in years. I don't know about you, but I've got a pretty good CSA, so when the season finally gets here I'll be doing pretty fucking well.

For high end meats I used Heritage Meats in the Essex Street Market, but they're closing now. Might be worth a call to see if they're still open. They would carry bacon at the level of what Brock would use. And there's a chance Saxelby Cheesemonger (in the same building) would have some real buttermilk. But call first, because the LES is at least an hour train ride away from you.

Can't help you source the corn. Sure as fuck could if you were making tortillas, though.

I watch iron chef (yes, even iron chef america), america's test kitchen, any of bourdain's or zimmern's shit (aside from the current zimmern series where he only narrates), booze traveler, guilty pleasures top chef and masterchef, and I'll occasionally watch almost anything if I'm exhausted and desperate to watch anything while I flop on the couch with the exception of restaurant stakeout and a few other exceptionally horrible shows

i like both Bourdain and Zimmern. there's always someone talking bad about Bourdain but he's laid back and actually has opinions of his own rather than someone like Zimmern who is nice and congenial at all times which is not bad at all.

fucking hell i love most of the hosts on the Travel Channel because i vicariously watch most of the shows on it religiously. i need to go torrent Booze Traveler and Layover episodes. those imo are the best.
