On the left, we have a plate of different varieties of California cheese - what the locals call "cheese" and people in the midwest quaintly refer to as "artisanal cheese", assuming they don't get angry at it and refuse to call it anything at all.

On the right, we have a plastic sack of the typical "cheese" you see in the midwest - what the locals call "normal cheese" and what people from other places don't consider cheese.

Why is this, and will things eventually change?

Yurofag that spent a couple of months in California here. You do get a pretty good variety of cheeses there. And hard cheeses both local and imported are generally of great quality. I especially liked pic related.

One thing that wasn't that great were mold cheeses like camembert, roquefort etc. because of the ban on raw milk. I also could find a good mozzarella for the life of me.

Good cheese was also quite expensive compared to back home.

I can get a round trip to a european capital city for around $400 during the off season, and once I'm there the god tier infrastructure means it's cheap as hell

Meanwhile if I visit fly over land:

And this right here is the main reason that the middle of the US has generally mediocre food - fewer people, less food sold overall, less room in the market for products that don't already have established demand. Go to the big cities that are like islands of civilization in a sea of farms, ranches, or mountains and you can find pretty much any food from anywhere in the world.
