my mom's cousin runs a truck with her husband. They make arabic food its not terrible but I went to their "opening" night and never again since. From what I hear now and then business is doing ok but could be better. They actually have review on yelp that are fairly positive too so maybe they can actually pull it off.

Was at Kuhnhenns brewery in Warren MI this past Tuesday afternoon and there was a food truck there, the speciality being smoked meat "KFC bowls" type dishes, with smoked pork, corn bread, cherry cole slaw, cheese and some other stuff.

Can't remember the name (it was a blue truck) but it was quite good, though at $8.00 a bowl, too expensive.

I was thinking of starting a food truck or food cart that sells the korean fried pancake "hotteok".

I've looked into it and I think it would be popular in my city because no one is actually making it. I'm just not sure how to get started on all of it though

eh, i knew someone was gonna bring that up

this particular one is for my wife, she's a picky eater. i left the vegetables that she doesn't like off her plate (tomatoes, squash, etc)

at least she eats more than tendies and ranch now though

this is kinda similar to what my idea is

were the bowls small? $8.00 a pop seems rather reasonable, a big mac meal from shitdonalds costs more than that round where i live

I'm seriously considering starting a food truck in the relatively near future. I was going to look into opening a small stand / walk up place, but after considering I may have to move in the future for my spouse's career, I figure a food truck is a better option, as I can just take the business with me. It's hard work, though, OP, I hope you're prepared for that. Long hours, fast pace, plus the hassle of traffic and driving and renting prep kitchen time.
