For me, it's olive oil. I always have butter and vegetable oil on hand, so that I'll go for weeks without buying a new bottle. Nothing like going 'Aw fuck' when a recipe calls for it, and, like a goldfish, forgetting five seconds later that I should add it to my shopping list.
