that is a sauté, not the only way of cooking mushrooms. they're going to lose moisture in any case.

the wonderful thing about mushrooms is that they don't really break down in cooking which means you can brown them by stewing them down until their juices are reduced enough to glaze. when i'm doing large batches i just chuck them in all at once.
