Arkansas I think calls it chicken fried steak too, and part of Louisiana, but once you get to the Mississippi, most people call it country fried steak, which is a major faux pas in TX, OK, and parts therein.

The only really noticeable variations I've found is in the quality of the meats. Some places have lengua so gross it's barely believable.

Believe it or not, there's an annual 2-day festival for them here. It's sad but true.

Yep, it's glorious. And I love how everyone adds their own touches to it, I've never had a bowl that's exactly the same, even though they all use the basics of it. When I made it for Christmas, I used Dungeness (of course), clams, mussels, squid, monkfish, scallops, and shrimp, and then topped each bowl with half a lobster that I'd broiled with hazelnut-parsley butter.

Honestly man all depends. I'm bilingual (but anglo) so I see both sides of it. A lot of places you might get hired but you could deal with a lot of shit too. Just this week there was that girl on the news that was getting harassed just for speaking English to just to another co-worker not even customers. There is potential to find a chill place that doesn't care or a place where the majority of people are anglo but it's tough. Wonderful city regarding culinary culture though. It's worth a shot I guess I have lots of friends here that don't speak French at all and have jobs.
