Some of my top vegetarian dishes are
>fish-style tofu tacos with homemade tortillas
Extra-firm tofu, cut thinly and drain, batter in corn starch and pan fry in canola or olive oil on very high heat(tofu seems to crisp slowly compared to regular meat, using low temps will make the tofu absorb too much oil
>potato soup
Self-explanatory, but not an option for a quick meal. More for days off

Black beans, mashed with a fork. Add lime juice to counter the smell and tone down the beaniness. Add chorizo mix and bread crumbs
>fried rice
A lot harder than people think, but once you get it down you can make a healthy meal. Some tricks to turn bland fried rice into awesome without being unhealthy are putting a star anise in your rice cooker, adding a pinch of sugar to the rice after adding it to the wok, and a dash of sesame oil in the water before cooking it.
>homemade ramen
Any noodles, but when boiling them add a pinch of baking powder. My trick is adding ground chili paste to the oil with the garlic while starting the dish. Add shitake/crimini mushrooms, broccoli, and any other vegetables. The trick is to not ever drink the broth after

BTW spaghetti with roasted garlic cloves doesn't even need meatballs, and is helpful when you need a good calorie loading meal the night before work.

I eat meat a lot when I actually eat, although I'm often so busy at worked or stressed that I just don't eat anything aside from maybe 1 meal.

Anyway you can make a decent mapo tofu vegetarian. Same with hot and sour soup. Sorry I don't use recipes for things that aren't baking so I can't provide them, but they shouldn't be hard to find. You can also do things like kimbap, or something like a polenta lasagna with (for example) roasted red peppers, portabello mushrooms, grilled eggplant, and some feta. Mushrooms in general are a nice replacement for meat.

i like to make a vegetable and lentil slurry. I start by softening onions and garlic, and then basically throwing whatever's around in with some stock and lentils. pour onto pasta or rice or bread once the lentils cook.

Pizza's always good, but it usually needs to be home made if you want it to keep from being greasy as fuck, even then you should have a napkin to dab it.

Once in a while I'll discover vegetable dishes that seasoned/made so well that I don't care their just veggies, but some times I'll still have a bit of bread with them. The Roasted Tuscan Vegetables at Bertucci’s deserves a special mention.
I also like certain salads.

3. Cranberry Walnut Salad:
lettuce and/or other leafy greens.

pasta with lentils recipe:

lentils, 250g
water, 1 litre
olive oil, 80ml
garlic, 4 cloves
water, boiling, as needed
pasta, 300g
salt, to taste
parsley leaves, fresh, a few handfuls

Put lentils, water, oil and garlic in a pot.
Bring to the boil.
Boil until lentils are cooked through and liquids are thick with bean starch, adding al ittle more boiling water if/as necessary.
Add pasta and boil to desired doneness.
Salt to taste.
Stir in parsley.
Serve.

Basically you finely dice some onion, garlic, and pepper or whatever you like. Cook it a bit. At this point the beans are mashed into mostly a paste.

Mix it with your favorite pasta and serve with some greens.

I'm not the guy you are replying to, but keep in mind that those prices can vary a lot. These are all normal prices (not counting sales):

Where I live, Pork and beef starts at from $3.50/lb for the cheap stuff (stew meat or supermarket ground beef)

Chicken is under $1/lb for whole birds; most expensive would be boneless skinless breast at about $3/lb.

In my area, the criminis are indeed cheap, but they are nearly flavorless. As they get older and are sold as portabellos then they are tasty, but they cost more than beef does. (I still buy them; I'm just pointing out that in my are they are NOT a cost savings compared to meat)

I'm curious how you are storing/transporting them, as I find meat to be much easier to transport and store. For transportation there is little worry about the meat getting crushed, but I am concerned about the mushrooms not getting crushed by other groceries during transport. Likewise for the meat: I can just toss it in the fridge or freezer. For the 'shrooms I have to worry about keeping the humidity correct so they don't dry out or get soggy. Got any shroom storage tips? I usually try and use them up ASAP after buying them to avoid worrying about storage.

Just had some for lunch that I made.

For the beans:
Black beans, dry, 250g
Water, double the amount necessary to cover
Special equipment: pressure cooker

Put beans and water in pressure cooker.
Set to medium-low/low heat and bring to the boil.
Boil at dead-medium-ish pressure for about 20 minutes then off the heat and allow to depressurise on its own.
Open lid. Beans should be done but have remained whole.

For the rice:
Rice, dry, 600g
Water, 350ml
Special equipment: rice cooker or pressure cooker

Wash rice under running water until water runs through it clear.
Put rice and water into rice cooker/pressure cooker and cook.
Hurray, rice.

For the sofrito:
Olive oil, 80ml
Onion, chopped, 2 large
Garlic, sliced, 4 large, 6 average or 8 small cloves
Salt, as necessary
Water, as necessary
Red bell pepper, deseeded, destemmed and chopped, 2 large
Green "frying" pepper, deseeded, destemmed and chopped, 2 large
Yellow bell pepper, deseeded, destemmed and chopped, 2 large

Put oil, onion and garlic into a sauté pan and set to high heat.
Salt generously and sauté until garlic just starts to blond, then add water to cover the pan bottom.
Reduce the water back out and add all the peppers and resalt generously.
Sauté a bit until the garlic start to turn a little brown then add just enough water again, reduce back out and you're done.

Rice and beans:
Sofrito from recipe above.
Black beans and their cooking water from recipe above.
Rice from recipe above.
Salt, pepper and dried Cuban oregano to taste.

Reheat sofrito a bit then add beans and water.
Cook to reduce a tad, then add the rice.
Stir about to combine, then stir in S&P and oregano to taste.
To be honest? I don't even use S&P nor Cuban oregano. I add motherfucking Knorr cilantro cubes. They don't taste like cilantro, actually.

It highly depends on where you live and what fish you use obviously. For instance sole and catfish probably won't ever be cheap, but herring is super cheap and if you live near the harbor there should be fish auctions that always stay below store price. Sole and catfish are /pretty/ cheap in my area. Catfish, which I don't care for, mind you, goes for about $2.99/lb and sole anywhere between $4.99-6.99/lb, usually centering right dead center there in price.

And, sadly, I don't think I've ever seen fresh herring around here, though I love the stuff. Really do. Delicious smoked herring.

Shit, I can get decent, wild caught (though subsequently frozen) salmon from time to time for as low as $3.19/lb.
