Anyone here regularly cook and prepare cuts of meat considered "gross" by some people such as pigs brain, cow stomach, pigs feet, etc...

I always am unsure who in the world buys this stuff at the grocery store, but also have a bit of a curiosity about trying at least the brains sometimes myself.

Do you even comprehend that cholesterol is a daily requirement, and that there are different types of cholesterol? Yes, a can of brains has much more than your daily requirement, but that doesn't mean that if you eat on occasion that it will clog your arteries instantly.

I cook a lot of heart, liver and cheek meat. I don't prepare it myself, but I often buy headcheese.

I don't care for brains. They don't have much flavor. I'd rather have liver.

I've some smoked, beef heart sausages in the fridge right now.
Um... I cook pork trotters and chicken feet regularly. Also beef knees and hooves as well as those same two parts of lamb, mutton and goat.

I don't like organs outside of poultry (and even those I don't like much) so I don't generally buy them but I'll eat them if offered.

now i'm no microbiologist, but i heard you should avoid mammal brains 'cause of prions (what causes things like mad cow disease). and unlike germs, prions can't be cooked out.

They can be cooked out but to break the protein fragments up properly, you would be basically nomming on ash.
