Chili with cheese and onion (under the cheese).

I was testing out my new meat grinder. It's chuck, short ribs, and brisket. I fry that with some garlic, and then add chiles that have been boiled in beef broth and pureed. That makes the gravy. Then I add some oregano, salt, and masa. Simmer until it's tender, and chill overnight. Gonna be eating this for the next 3-4 days.
