how is it not? in relation to the picture i was talking about air-dried ham vs smoked ham and air-dried sausage vs smoked sausage. two different procedures to make the same food last longer. absolutely comparable if you ask me.
also i'm not saying one is better, just to me it is. i always feel like thse parma and serrano hams taste a little bit like the smell of dog food. just preferences though.

Especially on pork belly. Getting a perfect cube with a piece of meat, a thick layer of jelly like fat and a crackling top is heaven.
