I'm pretty sure I'm transitioning right now to a vegetarian diet. As it is I rarely eat chicken, meat or pork. I do love seafood so I will never be a true vegetarian. Anywho I do want to get more tofu in my diet. Where can I find your best recipes? Also, I love cheese. That's not going to stop.

I am a pescatarian, and I love cheese. I lean towards a mediterranean diet. Lots of whole grains, fruits and vegetables, some dairy and some fish. There's plenty of great food to eat within that, don't let these assholes on here tell you otherwise. As for tofu, tempeh, seitan, etc. there's plenty of recipes online to play around with. Some of the ingredients are not for everyone, so rather than recommend anything in particular, I would suggest you experiment with them a while, see what you like. Also as another anon mentioned there are plenty of asian and east asian cuisines that are more naturally suited to this than typical european beef and pork based diets
