Actually they use crushed tomatoes in Chicago deep dish. Also sliced Wisconsin mozzarella and the crust sometimes has beer and corn meal in it.

it's a tomato casserole served in a bucket of dough... not much fancy about it

I'm American and have never had that kind of pizza. It looks disgusting.

Pizzamaking.com, Chicago style forum.
You won't come very close to the good pizza joints but a passable approximation.

Oooh, aren't we grand and fancy. Let's go play the grand piano down by the Seine with our gourmet, Neapolitan pizza. Fucking elitist.

not the same guy but honestly that shit is fucking disgusting... i mean i may be biased because i dont really enjoy cheese very much and only tolerate it when it is browned on pizza in small quantities but how can you eat a giant vat of cheese covered in sauce ? it just seems really fucking gross to eat gross dough cheese brick ... however to each their own so if you enjoy it good. I am honestly just curious as to how one would enjoy such a thing? the whole conept of pizza is a thin crispy crust with some flavoring on it... its like a nice brick oven peice of bread with some good sauce and a bit of well cooked fresh mozzarella on top... maybe some fresh basil and a bit of olive oil. I mean i don't really see how you can call a cheese casserole a pizza? i mean enjoy it by all means but its just really not even the same category of food; it just has similar ingredients.I dont really feel as if i am being a snob in anyway i mean i dont eat domino's very much but it is still pizza... deep dish just isnt pizza and i am personally disgusted by it.

Not liking cheese is probably the thing i dislike most about myself but it really isnt something i can affect. And i think being able to ignore such a strong dislike and still enjoy a food containing the ingredient i hate the most says a lot about the food. PIzza is such an amazing dish that i still enjoy it more than most other foods even though it contains cheese. The fact that i cant even eat a bite of deep dish casserole also should say a lot. I happen to be Italian so not liking cheese is even more difficult especially when i go back home.

I've never had a double d that had tons of cheese. O wait, you're the akin who has never had it, right? Just assuming from the image posted? If you look at it, the toppings are backwards. There's no way to cook a pizza with as much cheese as you think is on there.

Use the America's Test Kitchen recipe OP even if you only implement their dough and crust method:

This. You can search for reverse-engineered recipes for various famous pizzamakers, also.

IIRC, this is a sort of a FAQ recipe page for the site:

I've never had a deep dish pizza myself, but I figure if I want to make one, I would still use standard pizza ingredients, in greater portions.

And instead of a flat pizza pan, I would probably use a cake pan.
