This is usually opposite though. If there are more of the race that primarily eats the food the place is serving, chances are the food will be good, diversity means that the food isn't authentic and so people are eating it as tourists or because they have shit palates.

I always go to chinese restaurants with the highest number of actual chinese people and it's always good.

If a place is good enough, the goodness transcends race. People find out about things now, it's the internet era. If I see 100% from one race, and the place has been around for more than 5 years, the place is scraping by on nostalgia for the old country and the owner's extended family. You see this with places that always look a little sad, half the tables are empty at noon on a saturday, can't really tell who's the staff and who's the customer. Probably, that meat was recooked a few times past its sell by date. But you wouldn't know it from the amount of spicy sauce they dump all over it, and they know that.

If the place is always packed, with maybe 60-80% people from the restaurant's nationality, and the rest others, and you don't have any trouble telling who works there and who's eating there, that's a much better sign.

Hipsters who use cringey phrases like "hole in the wall" will always tell themselves that one white customer = place ruined, but those are people who want to be special snowflakes. It's not about the food. They'd just as well eat spoiled garbage if it means being able to tweet about being urban pioneers who totally discovered this filthy new tacos de lengua place in bath beach. It's pathetic, and bordering on racist.
