Why do american people keep bread and fruits/veggies in their fridge ? I'll never get the point of it.

You can simulate seasonal change by putting certain vegetables in the fridge. Helps for late planting.

Also it slows down decay.

it's very humid where i live, and i don't go through a normal sized loaf of bread fast enough for it to not start molding. it goes in the fridge.

A typical sandwich loaf I buy lasts a week and a half in the fridge. If I just keep it outside it lasts half that

A fridge is humid too.
If you can't eat bread as it's still fresh (within two days), just use in a dish like soup or pain perdu.

Which is making you throw it out? Mold or staleness?

If it's mold you're keeping it in the incorrect packaging, such as plastic. Bread needs to be able to "breathe" a little or moisture will create mold. A paper sack is a great way to store bread, or the traditional wooden "bread box".

I was brought up keeping bread in the freezer...
Well, sliced bread anyways. If I'm getting a good loaf of bread I'm sure to use it in a couple days so I just leave it out.

Bread on the other hand definitely does not belong in the fridge. The fridge even makes bread go bad faster.

Not in my experience. I lived in Kemah, TX for years. Right on the gulf coast. Hot and humid as hell. Bread would keep for only a couple days in a plastic bag, but in a paper grocery sack it would easily last a week.

The packaging you store it in is very important.
