I'll tell you this: you will NOT get an accurate impression of Ramsay just from watching his American shows. And while his Cooking Course videos reveal a good portion of his knowledge and competence in gastronomy, they won't tell you EVERYTHING that he knows. This is because they feature more conventional recipes; they won't feature actual haute cuisine.

Becoming a proper head chef takes years of study, work, and experience. And the Michelin star system respects that. Any high-class restaurant that is serious about becoming recognized and successful must strive for these stars. Getting even one star is an achievement; getting all three, AND maintaining those three for an extended period of time, is the height of culinary success. It means that you are one of the best. It means that you know how to run a kitchen, how to run a staff of highly-skilled chefs who crank out actual gourmet food constantly throughout the day, how to taste the difference between sole and escolar, and a variety of other things. So before you denigrate someone like Ramsay, fucking know what you are talking about. Or fuck off and go back to your Doritos and Mountain Dew.

i think it's fair to say that the michelin guide, flawed or not, is not something virtually anyone on 4chan can talk about with authority. none of us have been to more than a handful of restaurants with 2 or more stars and we don't have a great deal of information about those restaurants did to get their stars.

i've worked in a one star restaurant and we made absolutely delicious food that wasn't absurdly expensive. the anxiety and nerves surrounding the possibility of a second star made it very clear to me that any form of bribery was not a part of the equation.

i've also eaten at a couple of three star places and while subjectively the food wasn't necessarily better than where i worked, the service and level of consistency was very clearly of the highest standard. if you look at the criteria for 3 stars, it makes sense that a lot of these places earn them.
