use a mandolin slicer for both your bananas and apples. Keep the bananas whole as you slice them to avoid mashing them up. Use lemon juice as you soak both apples, and bananas. Pretty easy. You can also use an egg sliced for doing strawberries. They usually come out paper thin after being dried but worth it. Enjoy your dried fruit.

Do you have a coffee grinder or a mortar and pestle? You can dry all sorts of veggies and either save them in jars as little pieces or grind them into a powder for use in soups, stews, and baked goods. It is amazing.

That's a really good idea. I did dehydrated strawberry slices and they were a lot of work to prepare.

I usually do sweet potato slices for my dog, wild mushrooms, berries, banana, apple, fruit leather (really good), dried yogurt/fruit leather, stuff like that

Agaricus bisporus (white "pizza" mushrooms/portobello)

I powdered everything with a coffee grinder set to "fine". I now use it in all my soups, stews, and lots of my baked goods. Adding it to dough for things like cheddar cheese, garlic biscuits or whole grain breads makes them amazing.

Nice, any idea how long the powders last in a sealed jar? I made my own onion and garlic powders, and they're clumping up as expected however they seem to be doing just fine a few months after the drying.

I got a little (lot) drunk and while making some beef jerky, put a few fillets of anchovies on some freespace. Sure enough, they dried out into super salty fishy crunchy bits. I'll bet that could substitute for a bit of salt in the soup packets.

I got drunk the next day and ate them dry.

I've seen the home made dehydrators using cotton filters and a box fan, and i've even seen ones that have a very low temp heating element (without a fan).

Get one with an adjustable heating element. For things like herbs, you'll only need ~75 degree heat to dry them in a decent amount of time. However things with a lot of water such as fruits and meats will take days to dry out. If you just use air movement, you run a significantly higher risk of bacterial growth.

However, the 140 degree temps some dehydrators recommend is usually too high and ends up cooking the meat.

tl;dr Heat is [sometimes] good because it speeds up the drying process for bacteria sensitive foods.

Years, but it really depends on the methods you are using to keep them moisture free. Since I have mine in glass cannons jars I can gently heat the jar before putting the contents in then seal them. Once it all cools off the lid pops down.

Many dehydrators don't have a fan and only have air vents in the top and bottom with a source of heat. The length of time and you local air humidity are what play the biggest role in whether or not you should use an air-only dehydrating method. Where I live, I have to have a source of heat because the humidity is so high that even with lots of air flow everything molds up or smells like really old shoes.

One easy method of making a DIY dehydrator is putting a 60W-100W incandescent lightbulb in the bottom with air vents.

Looks at the size and ease of cleaning mostly. How much jerky will you be making in one batch and what kind of cleaning do you want to do? Dehydrators with metal screens/grating can take a beating and are easier to clean stuck-on things off them. Most any dehydrator can dehydrate meat. One of the other factors is time. How long do you want it to take? The more expensive models of dehydrators will have more energy use for heating and fan(s), but will significantly cut down on the length of time it takes to dehydrate the meat.

If you are going to be doing many batches of meat, like people that hunt deer and other game then a dehydrator in the $200 range will be what you'll better enjoy using. There's also the option of making your own if you have the tools and the basic know-how + google. Otherwise, get a cheap plastic one or make one with a PC fan, AC-DC wall adapter that fits the voltage of the fan, incandescent lightbulb, and cardboard box to make a quick and easy dehydrator.

If you live in a hispanic area, try a milanesa cut. Otherwise if you're looking for cheap, get the cheapest and leanest you can. I usually go with a london broil cut if I don't mind a bit of chewyness. I hear flank steak is good for jerky, but its gotten to be cost prohibitive lately.

Try a couple different cuts, some are too livery, some can be just flavorless. My historical favorite is marinading the beef in A1 steak sauce overnight, then drying it.

Sriracha jerky is nice if you like the heat and sweet. Salt and pepper is nice. I haven't had too much luck with teryaki for some reason.

Stock up on liquid smoke, worster sauce, and your favorite marinades. You can do stuff with peppers, but you'll have to dry the peppers, grind them finely, then sprinkle that on the beef. (habeneros, hatch, or other peppers)
