My grandmother used to cook with it. It's fantastic for browning meat. I wouldn't make a pot roast without it. I'd say most classic American farmhouse dishes and Atlantic coast cooking tastes a little better when you use bacon fat as the cooking oil.

But today's bacon is different than the bacon in my grandmother's time. Old time bacon was smoked, and the meat was brown. Today's bacon is heavily treated with nitrates, and the meat is pink. If all you can get is pink bacon I'd probably not recommend using the fat for cooking on a regular basis, because consuming that much nitrates might not be a good idea.

It's good as something to put whole into soups/stews/or braises to just let cook and add some smokey, meaty flavor but it's not great for eating seeing as they're usually about 85-90% fat.
If you're cooking bacon just to get the rendered fat, though, seems like it might be the way to go.

Open the jars and lay them in a field (out of the sun so the glass doesn't start a fire). In about a week there won't be a speck of fat left. Small animals and ants will clean them out completely. You can collect the jars and dispose of them in your recycling or wash and use them again for the same purpose.

They bring it back to the colony in chunks and all the ants eat it. They get it in the late evening or early morning with the fat has cooled enough to solidify. I've been doing this for many years - my grandmother showed me. She also used to clean her cast iron skillets using ants.
