I'm familiar with the root vegetables and chicken thing. It was suggested to me by the butcher that I treat this as a guinea hen and not the regular grocery store chicken, at least until I've cooked a few and I know what I'm doing.

So I'm using a recipe for guinea hen, without my own modifications.

In case anyone wondered, it came out great. I'm about halfway into the wine and I live alone, so I just ripped a few chunks out with the help of my chef knife, dredged them in the sauce, and stuffed my face while alternately popping duck fat potatoes in my mouth. Felt disgustingly good.

There were hardly any drippings, and I'm sure the usual chicken with root vegetables would have resulted in somewhat dry root vegetables, but if you look back at the recipe you'll see that I used a bunch of chicken stock to turn the garlic, and what little drippings there were, into a sauce.

Springbank is quite good. I've only had the 10, but I can imagine that the 12 is the same shit with a more cask influence. It's rather light with a honey toasty flavor, and a general nonspecific fruityness. It's also rather salty, and somewhat peated. Springbank also bottles at a bit higher strength than average, so that's good. It benefits from a little bit of water and a couple minutes pause before drinking, moreso than other whiskies that are immediately in your face.

I've never tried Old Pulteney because it sounds like relatively calm and light stuff, and I'm a fedora-wearing peat drinker, so.

What the fuck. The cheapest single malt I have ever seen was a Benriach for $34, the second cheapest was Old Pulteney for $43. Laphroaig is around $50, HP 12 was $53, and Talisker is upwards of $70. If you are new, I'd recommend a Springbank 12 over pretty much anything else. Highland Park 12 has been downhill as of late. Other than that, the Bunnahabhain 12 is great, as is Glenfarclas 15.

I wouldn't go spending money on Glenmorangie when a larger percentage of the price goes to marketing rather than quality of production. I am not anti-capitalist or anything, it's just that those two thing usually go hand in hand. But if Quinta Ruban is getting rave reviews and you've set your mind on it, go for it and find out for your self.

Now way I am going to buy any Glenmorangie, way too much scotch that sounds a lot more interesting. I have had Old Pulteney 12 and HP 12 and I liked them both. Springbank 10 and Talisker 10 are the next two I want to try the most. I am just curious about the peat and smoke aspect of scotch so I was going to push off the Springbank and the Talisker (any opinions on the Talisker 10?) for an Ardbeg or Laphroaig. Not quite sure yet.

I also am leaning towards the GlenCadam 12 as an introduction to really sherried malts. I can only really buy entry level 10/12 year old bottles. And it seems to be richer/tastier than Aberlour 10 or Glenfarclas 12 (though the 15 sounds great it is out of my price range).

If you want smoke, my best recommendation would be Lagavulin 16. It might be a little pricey in some areas, but it is exceptionally well balanced and multi dimensional. Ardbeg 10 is a lot better than Laphroaig 10 in my opinion, but both at still gigantic smoke bombs.

If you absolutely want Laphroaig, then get the quarter cask version.
