It's finally cool enough here in SoCal to start cooking some Fall recipes...I decided to start with a roasted chicken. I chose a 3 lb bird which I trimmed and slathered in butter, salt, garlic powder, and pepper. In to the oven at 450 for fifteen minutes, then reduced to 375 for an hour...

Here's a tip you can try next time OP. Leave your butter out at room temp. add your spice blend to the softened butter, and mix it all together. then rub the butter and spices underneath the skin of the raw bird.

distinguished gentlem'lady detected. make sure to get good maillards. a cast iron pan helps with this (actually if you don't use a cast iron pan to spatchcock, you might as well eat mcdonalds)
