What's your favorite foreign food? Mine has to be baklava especially when you cook the sauce with a cinnamon stick and an orange peel and spray the layers of dough with rose water. I want to make some so bad right now but I'm too poor to buy nuts.

Falafel.

Shit, I love falafel. I've tried making it at home a ton of times but I can never get the chickpea's consistency right.

I use a fork to mash. Using the fork helps prevent over-mashing.

>> No.5929235

>>5929227
Do you buy them as whole beans or what? I usually soak them overnight but a fork made them too chunky and my blender made them to pasty. Maybe I just need to mash for longer with a fork.

I love paella and grilled, fresh sardines. I miss those more than anything else from my time in Spain.

I buy them whole and canned. Mashing with a fork is a bitch because it takes forever, but I couldn't figure out a way with the blender that wasn't overkill. I'm sure some people have a better technique, but that's what worked for me.

Man both are so great.
Anyway my favorite would be sashimi, especially tuna

What kind of nuts do you use in yours? I've only made baklava 3 times in my life. Mexican here.

It's usually a mix, but walnuts seem to be the most prominent.

I've seen some stores have them with pistachio. Green baklava, it just looks unsettling.

Now I want baklava but there's no where around here to get it. Too lazy to make it myself today.

Nope. That's how the Israeli Jews make them. The name means "made with a metric fucktonne of fava beans" in old Durkadurka language. It's Christian Arab food and it's made with fava beans. It's pretty delicious.

A single type of food? nigiri sushi

A single dish? tom yum goong soup made extra thai hot [with straw mushrooms not the regular white ones you'll see in 4/5 thai places in the US]

No just anything that hasn't been incorporated into our national palate.

Don't worry, eventually we'll popularize something from your shitty country to the point that we make a better version of it. You can then bitch about how our better version is inauthentic.

If you have a stand mixer soaking them and then putting them through the grinder attachment twice makes them just right. Otherwise I've seen them made in a food processor with good looking results.

Almonds work well too.

you're supposed to use soaked but uncooked chickpeas for falafel (actually fava like >>5929717 says)

using canned and cooked chickpeas is why you have to worry about overmashing.

He's right. I think it was a Terry Pratchett book where he said greek food is simple - put it in a bucket and if it crawls out, serve it lukewarm as food. If it stays in the bucket, make wine from it.

Greek food is like Turkish food if you made it from a recipe book translated from chinese.

Moussaka's kind of nice, but that's it.
