Hey /ck/, I'm tasked with making Mexican food for a British person who hasn't really had anything close to ethnic Mexican before. It's a special occasion so I really don't want to fuck this up. They're very open minded about food but I don't know what dish I should make and I don't have access to a slow cooker. I'd like to incorporate potatoes somehow I think and make some guacamole.

Any suggestions?

I cannot stress this enough, I've seen so many restaurants open up with pretty decent food then a month later the recipes have all been revised to bland nothingness because whiny fucks complained. Check with your friend to make sure they'll be all right with it before you use anything slightly spicy. All it is, is spiced up pulled pork. You need some proper corn tortillas though. Some some fresh guac and a salsa verde and you're in business. You can't go wrong with that. Good luck finding tomatillos and the corn tortillas though.

If you can't find any at the butcher's counter then you might have to just go to an actual butcher. Failing having a butcher nearby you could do an online grocery delivery, most big supermarket chains do them and it allows you to get things that may not be in stock or even supplied at what's close to you.

Though I don't see why you'd have trouble finding any, I never have done and I've lived in a fair few places around the UK. Maybe you're just in a particularly shitty area with no big supermarket.

Also, Asda is shit, try go to a Waitrose if there's one near by.

The spices aren't the problem. It's the chilies. I don't think mulatos, anchos, pasillas, chipotles and mecos are typically available in the UK. And you need them all for Puebla-style mole. I don't think 'table chocolate' (chocolate de mesa) is a thing in the UK, either, though you can probably swap out baker's chocolate, I guess.
The spices (fennel, peppercorn, cloves, cinnamon and allspice) wouldn't be at all difficult.

Okay friends, so I used to buy this old el paso packet mix (picture related) which I love since it was such a nice and easy casserole. However for awhile I've been wanting to make someone similar but homemade and more "authentic" because I prefer home cooking than just throwing together a sachet. Totally different. It's kinda gritty and just a bit bitter. Most people find it unpleasant to eat straight away. It's typically of lower quality than eating chocolate but is just fine for melting for other uses. When melted, there's no grittiness for some reason. Beats me why.
