Are you trying to lose weight or gain it? You might want to cut down your portion sizes if you're trying to lose it.

Ground beef you cooked yourself is healthy if you only eat it on occasion. Baked chicken breast in olive oil and your choice of spice is healthy. Leafy greens, yams, carrots, peas, onion.

Nuts in moderation. They're good for you but a cup of walnuts is like a full meal worth of calories.

Get a bunch of vegetables for roasting

like any combination of

potatoes, sweet potatoes, beets, turnips, onions, parsnips, carrots, bell peppers, winter squash, broccoli, Brussels
sprouts, cauliflower, asparagus, eggplant

Chop up your vegetables. The smaller you chop, the faster it cooks, so try to keep everything the same size so it cooks evenly.

Set your oven to 400F

Dump your vegetables into a roasting pan. Drizzle everything with olive oil (about 2 tablespoons per medium-sized roasting pan). Season generously with salt and pepper and add any other extras you want like

sage, oregano, thyme, garlic cloves, rosemary lemon zest, paprika, whole bay leaves(take them out after cooking)

Put it in the oven and check on them in 45 mins. If you can stick a fork in them easily, they're done. If they're not put them back in and check again in 15 mins. Don't worry too much about overcooking them.

When they're done, use a spatula to separate them from the pan. Don't forget to take out any bay leaves so you don't eat them. If you used garlic cloves, take those out, mash them into a garlic paste (dont forget to take the skin off!) and stir it back into the pan.

You can also throw in slices of lemon before you roast and squeeze out the juices on the vegetables after you take them out too!
