I actually have a recipe for that from a hunter's log of a year's hunts across the globe. IIRC, he and his wife (also a hunter) were in Uttar Pradesh with some Indian noble who complained he was only able to bring out 10 servants with him on the hunt. If you're not simply joking, I could look through my library and find the book and recipe.
Do be patient, however, as I've literally thousands of books laying about and have organised them in the least helpful way possible (that is: not at all).
The log was very interesting, actually, separated into twelve chapters for each month of the year with a story of where the recipe came from and how it was served to them by the host of their hunt (or the host's servants) in that particular country. Quite good reading, really, even if you're neither a cook nor a hunter.

Treat it like a small Turkey or oversized Cornish game hen. Yhogh it may have a lot of dark meat, like duck and maybe swan.

Be sure to save a tail feather or two, and garnish near the serving tray- but not directly on it.

For double points, turducken that dhit with some pheasant.

Just as a sidebar. You realize paefowl aren't even remotely endangered, right?

yet PETA would save the life of every ant you step on accidentally if it means destroying yours.
