Hey /ck/, I bought some wapanese eggplant at the farmers market on a whim. Haven't had eggplant of any kind in over 5 years. I never liked it as a kid or young adult. I figure I've grown out of that and wanted to try it again.

How should I prepare it? Suggestions?

I'm just gonna roast it in olive oil and balsamic if I don't hear anything.

Roasting is always a good choice. Otherwise I guess you can make some tempura or any aubergine fry out of it.

If you still have some left I'd recommend mapo nasu.

You can also make a nice crumble or a gratin with it.

Unlike courgettes, there is not a lot of water in aubergines so whatever you choose, you should fry it beforehand during 20/30min before putting any other ingredient with it, otherwise any other ingredient will burn and the aubergine will just begin to be cooked.

I just had the following today:

Remove the stem and cut in half. Let it rest submerged in salty water for about 30-45 minutes. Scrape out the pulp safe for .5-1cm from the peel and fry the hollowed out fruit in olive oil.

For the filling, fry red red onions and garlic with whole cumin and coriander seeds. When the onions are done, add diced tomatoes, tuna (some prefer seared ground meat instead), diced green and black olives, tomato paste, tabasco sauce, oregano, ground black pepper and a bit of olive oil. Depending on the amount of filling you need, you can also dice the scraped out pulp and add it back in. Let it sit on medium heat for five to ten minutes, stir occasionally.

Fill the hollowed out eggplant, add cheese of your liking and sheep's cheese on top. Bake in pre-heated oven at about 200 C until it's got a nice crust.

Serve with cooked rice.

Disclaimer: I have no idea what I'm doing, but it tasted quite good.

Filled (basically shove meat sauce in there and spread cheese and into the oven, google it), tempura'd, in a wook, or on the grill with some olive oil and herbs. Is all I know how to cook at least.

my fave things to do with them (most of which have been mentioned)

-tempura
-roast (oil, salt, pepper, garlic... maybe a pinch of cumin and cinnamon, or rosemary, oregano, and thyme)
- eggplant parm
- stew
- stuff with boiled rice, and sprinkle a little salt and sugar on top. Steam over chicken soup, and serve on the side, or even in the soup with a bit of ginger and soya

dice the eggplant, spray it, salt it, put on a paper-towel lined dish and microwave for 8-15 minutes on high until it reduces to about 1/3 its size.

This way, all of the moisture in the eggplant steams out and you can brown it in a pan, which makes it super delicious even without a sauce.
