Texmex is seen as an inauthentic imitation lacking character and robust flavors. Every state along (or even near) the Mexican border has their own specific version of Mexican cuisine, and we all spend our time squabbling over whose is the best.

Which is stupid, of course, because New Mexican is clearly the best. I don't even know why there's any argument.

because in most parts of the country it is puke worthy garbage. I'm a texan whos traveled a lot and will eat random tex mex in other states, it isn't pretty. most of the stuff here in tex is really good and is my fave kind of food. I say texas is best but I'm not too proud to not vouch for new mexico, arizona, and so-cal. I've had some amazing "mexican" food there. its not quite the same as tex mex but its really good.

Go for it. Texas is essentially a country unto itself. It's home to 4 of the 10 largest cities in the country, so it has a fairly urbane and cosmopolitan population. It's also home to a good chunk of the backwards "country folk" in the United States. Every region is like its own state, which also adds to the intrigue.

New Mexico is insanely gorgeous (compared to the endless flatness that comprises most of Texas), but if you come from a busy metropolitan center, prepare for some culture shock. There are just over two million people spread out over an area about the size of Norway or Poland, and most of them are in a narrow 100km strip along the central corridor.

Where exactly are you eating this "texmex"? I'm in Houston and we have a lot of Authentic style mexican food as well as a shit ton of tex mex, and all the tex mex is made by mexicans. If you're eating this flyover state "tex mex" then yeah they may be using cream of mushroom and hiding everything under cheese but that is just not the case with authentic tex mex. I wish other states would drop the tex from their food and start naming it after their state like virginia mex or something. It would make more sense that it's garbage then and it would stop giving us such a bad name.
