I don't think there's anything you can do to avoid cancer. Eat a hot dog? Cancer. Work near the highway? Cancer. Work fifty miles downwind of a coal plant? Cancer. Born with crummy genetics? Cancer. OK, what are you on about? If you're talking about nitrites, you seem mistaken.

Sodium Nitrite(aka saltpeter) which is used as a chemical color protect any in cured meats is pure white. Ground pork is barely pink at all, even with colorfasting from the nitrites it wouldn't account for that shade. Now, Bright Leafs may have nitrite added, I'm not 100% positive without an ingredient list handy, but that doesn't mean they're not dyed.
