I just make them plain sometimes and drizzle olive oil + salt and pepper on them and eat them as is. or I puree them into a bean paste like adzuki beans.

they go great on salad, and sometimes I even add them to my cereal because they don't clash or conflict with the cereal.

I also add them to roasted vegetables in the oven.

Put them in a few minutes before you serve instead of right at the beginning, that way they won't be overcooked.

That works for all ingredients, adding them at the right point in the cooking timeline so that everything is cooked just right all at the same time.

They might just be old beans if not soft after 10+ hours. The age of the beans really does matter. Also if you add salt while cooking, it slows the process down if not making it impossible to hydrate the things.

Just use plain water and check the source of the beans, if it's a slow turnover place, they might just be so old that they'll never hydrate.

10+ hours is way more than enough.

I take a smoked sausage dice it, then brown it

add in a tin of red beans, a small can of tomato sauce, and half a jar of salsa

sautee till reduced

serve on white rice with scallions, sour cream, and grated cheddar.

Get a cheap $25 grain mill and make short breads and cakes with beans. It's pretty awesome:

Bean Cake Recipe

1/2 Cup of dry, whole Black Beans
1/2 Cup of dry, whole Red Kidney Beans
3 Teaspoon Baking Powder
1/2 Teaspoon Salt
2 Teaspoon Vanilla Extract
1/2 Cup Brown Sugar
3 Eggs
3 Tablespoons Soft/Melted Butter
2/3 Cup Whole Milk

Use a grain mill/coffee grinder/mortar and pestle to mill all the beans into a flour or meal. It can be a bit more coarse than cornmeal (like grits) or finer like flour.

Mix all ingredients well. Pour batter into a buttered, hot cast iron skillet. Bake in the oven at 350F until golden brown on top and it has pulled away from the side.

Any type of dry bean or mixture of dry beans can be used for this recipe.
