The fake meat thing came from Buddhist temple cooking. They worked out vegetarian versions of meat so the monks could be fed variations of classic Chinese dishes.

If you want vegetarian food that's not trying to pretend it's meat I'd recommend Middle Eastern or Indian cuisines. They're full of delicious vegetarian dishes that stand on their own, because they come from places where poor people figured out how to eat well.
